Tucked away in a very American-style shopping mall in Mumbai is my favorite restaurant, Rajdhani, which serves vegetarian fare from the northwestern states of Gujarat and Rajasthan. When I had stopped by for brunch on a recent visit, everything was outstanding, but these cowpeas bowled me over with their earthy-rich, thymelike, sweet, hot, and succulent flavors.
