I love the fact that there is more spinach than legumes in this curry. Pressure-cooking greens might seem like overkill (and it is, for texture and nutrients), but the silky smooth sauce makes it all right. This recipe makes a huge batch, and if you are like me, you will ladle it over rice, wrap it into flatbreads, and eat it by the spoonful every chance you get until it is all gone. Yes, you can make half the recipe, but then you won’t have all those wonderful leftovers!
