The acidity also helps lower the heat from the chiles, with the able assistance of the toasted chickpea flour. If you wish, a teaspoon or two of white granulated sugar, stirred in with the salt, yields a pleasantly sweet undertone to the curry. Balance rears its pretty head once again.
