Dill is not a very popular herb in many regions of India, but it is a favorite in the Sindhi community in the northwest. Stirred in at the very end, the dill retains its sharp, almost grassy essence. Sindhi cooks often combine spinach and dill, but in this recipe, I chose the other natural companion: sweet carrots.
