We do thank the British for introducing Madras curry powder to the world. Efforts to capture the flavors of “a spicy curry” resulted in this well-known blend, packaged and sold in many versions around the world. My simplified version re-creates the essence of this effort and is sprinkled into this corn-tomato combination. Even though I recommend kernels stripped off fresh ears of corn, feel free to throw in kernels from leftover roasted cobs.
