Maybe this is a restaurant’s way to use up leftover Grilled Eggplant Pâté with Mango Powder from the previous day’s buffet—just swirl in some green peas for the all-you-can-eat offering! My version actually makes the effort to create an entirely new sauce with nutty almonds and sweet golden raisins, among other ingredients. Serve this mashed goodness with wedges of buttery Naan.
