My dear friend Molu’s family regularly enjoyed this version of the more traditional eggplant pâté. The mashed potatoes bulk up the curry and also absorb some of the excess liquid from the eggplant, to make a thickly sauced pâté that is perfect when scooped up with pieces of ghee-laced Naan.
