Usually when I have purchased a large amount of an ingredient for testing recipes, I create multiple dishes with that ingredient so that nothing goes to waste (that is one of my pet peeves—wasting food). So, one Saturday afternoon when I happened to be knee-deep in bottle gourd squash (a good predicament, mind you), I concocted a number of curries, including this one.
