Green tomatoes should never be eaten raw because they contain an alkaloid called tomatine, which is a toxin, similar to the one found in potatoes that turn green. When purchasing unripe green tomatoes, pick ones that are very firm to the touch and blemish-free, with a smooth, light green skin. (Some heir-loom varieties remain green even when ripe.
