  • About

Pillow-soft and pleasantly bitter, these flatbreads are the perfect eating tool for many of this book’s curries. Tear off a bite-size morsel of the bread, wrap it around your favorite curry, and devour the combination. Fenugreek leaves perfume the bread in this recipe, but you can use any herb or ground spice (or a combination) for a different flavor. Chappatis are easy to make once you get your rhythm, and the cooked breads freeze well.
