  • 1 onion, diced
  • 60 g/ 2 oz butter

Method

In a heavy-based pan, sweat the onion in the butter until soft and translucent, then add the cucumber and continue to cook gently for 5 minutes.

Pour in the stock, bring to the boil, lower the heat, season with salt and pepper and simmer for 5 minutes.
