The combination of crisp deep-fried chicken wings and a dip of blue cheese mayonnaise is said to have originated in Buffalo, in upstate New York, hence the name.
Cut each chicken wing into 3 through the joints, reserving the tips for stock.
Put the Worcestershire sauce, olive oil and Tabasco in a bowl and add the wing segments. Turn to coat and leave to marinate for 4 hours at room temperature, turning from time to time, or refrigerate overnight and remove 2 hours before cooking in the oven rather than deep-frying, the US preference.
