Fried Noodles

Japanese noodle restaurants are all the rage, yet it is very easy to be just as fashionable at home, where you can make your own variations on the noodle theme in minutes. You can dress the dish up with luxurious ingredients like scampi, but you could as easily use stir-fried strips of chicken breast, where a little goes a long way cheaply.

Ingredients

  • 450 g/ 1 lb ‘instant’ Oriental-style noodles
  • 2 tbsp sunflower oil
  • 3 skinless chicken breasts, cut into strips
  • 6 spring onions, cut into 1-cm / ½-inch pieces
  • 2.5-cm / 1-inch piece of root ginger, peeled and cut into fine julienne strips
  • 2 garlic cloves, smashed and chopped
  • 2 tbsp dark sesame oil
  • small bunch of fresh coriander leaves, to dress
  • Kikkoman soy sauce, to serve

Method

Blanch the noodles according to the packet instructions and drain.

Put the sunflower oil in a heavy frying pan and stir-fry the chicken over a moderate heat for about 3 minutes. Add the spring onions, ginger and garlic, and continue to stir-fry for 1 minute.

Add the sesame oil, dump in the noodles and toss to mix. When the noodles are hot, tip into bowls, scatter with coriander leaves and serve with soy sauce to individual taste. Very street-credible indeed.
