The Luikse wafel (Liège waffle) is the traditional street food waffle from Liège in Wallonia where they call it wafe in Walloon, etymologically related to the Frankish wafla – as opposed to gaufre in modern French.

It wouldn’t be an iconic bake without a good story: for the Liège waffle, the legend goes that its origin dates back to the 18th century when the Prince–Bishop of Liège asked his cook to create something sweet for him.
