Stofé means fromage blanc or white cheese in Walloon; a cheese that typically resembles full-fat quark. The crust of this tart is first covered with a thin layer of apple sauce, then the cheese mixture, flavoured with macaroons, and almond is scooped on top. In the past, bitter almonds were used, but these are now considered poisonous and the alternative – apricot kernels – can be hard to find.
