Ingredients: ¼ cup (60 ml) water; ½ teaspoon toasted aniseed or fennel; ½ teaspoon whole toasted coriander seeds; ½ teaspoon cinnamon; After punching down the dough in the sixth step, divide it into 12 balls. Make a hollow in each ball, and fill it with about 4 tablespoons of one of the fillings suggested below. Close the ball very well, and with a rolling-pin flatten it into an oval ½ in/1 cm thick and 8 in/20 cm long. Transfer pieces to a greased baking sheet, and let them rise for about 30 minutes. Just before baking, brush the pieces with beaten egg, and make impressions with the fingers on the surface of each, avoiding the borders.; 2 cups (12 oz/340 g) dates, pitted and coarsely chopped; 1 tablespoon (½ oz/15 g) butter; 1 cup (2 oz/60 g) parsley or fresh mint, chopped, or a combination of both; 2 cups (8 oz/225 g) shredded mozzarella cheese
