Geymer is the solidified thickest layer of cream from buffalo or cow’s milk which has been heated, cooled, and then skimmed off. I have called it ‘slabs of cream’ because the cream layer at the top is taken in one flat piece, and cut as needed. In the medieval Islamic world there was mention of biraaf, which on investigation turned out to be the prototype of our modern geymer.
