For everyday use, a simple and light salad dressing is used. Olive oil and vinegar in the ratio of one part olive oil to two parts vinegar, with a pinch of sugar, are mixed with the salad before serving it. In wintertime, fresh lemon juice or the sweet and sour juice of a Seville orange (rarinj/narinj) would replace the vinegar. A sprinkle of salt and black pepper are also added.
