  • 2 lbs (900 g) lean roasting beef; or trimmed chunk of lamb; or skinned boneless chicken breasts, trimmed


  • Using a sharp knife cut beef or lamb crosswise into ¼ in/6 mm-thick slices. Then cut each slice into thin strips, as thin as possible. If using chicken cut it into thin strips. It helps a lot if you let pieces of meat harden a little in the freezer before cutting.
  • In a big bowl, mix ingredients for marinade, except for salt. Add meat and
