Zlabya is always mentioned in conjunction with baklawa. It is shaped like a tubular rosette, translucent and crispy on the outside and yet succulent on the inside. Baghdad is believed to be the originator of this popular dessert. Indeed, according to some stories, even the name itself is said to be derived from that of the famous musician and singer, Ziryab (c. 800 ad), of Iraqi origin.
