Medium syrup is required for making baklawa. It should be thin enough to be absorbed by the baked pastry but thick enough to prevent the baklawa from getting soggy. Prepare the syrup while baklawa is baking in the oven to allow it to cool off before using it.

Ingredients

  • 2 cups (16 oz/450 g) granulated sugar

Method

  • In a medium pot combine all ingredients except for rose or orange blossom water, if using. Bring to a boil on high heat, and stir frequently with a wooden spoon to allow sugar to dissolve. Skim as needed.
  • Continue boiling the syrup on medium heat, undisturbed, until it reaches the right consistency, about 20 minutes. You can easily tell when syrup is done by putt
