This filling is used in open-faced baklawa to prevent the filling from scattering during handling and baking. Toasting the almonds and walnuts is recommended to bring out their flavor.

Ingredients

  • 2 egg-whites, stiffly beaten
  • ½ cup (4 oz/115 g)

Method

  • Fold ingredients together, and use as directed.
