Traditionally, walnuts are used for filling these cookies/biscuits, but other nuts may be substituted. Toasting the nuts before grinding them will help bring out their aroma.
Ingredients
2cups (8oz/225g) shelled walnuts (or almonds or pistachios)
Put all the ingredients, except rose water, in a blender or food processor and grind coarsely. The sugar will prevent nuts from getting pasty. Turn into a bowl and sprinkle the mixture with rose water. Stir with a fork to allow particles to somewhat stick together. Shape as instructed in ‘Shaping Kleicha’ opposite.
