For these cookies/biscuits, use the walnut filling given above, or any of the suggested alternative nuts. The smaller the cookies are made, the prouder the maker will be of her skill and dexterity. But since the tiny ones are time-consuming, the following instructions will yield medium-sized ones.

Method

  • Take a walnut-size piece of dough and with your fingers flatten it to a thin disc. Put about 1 heaped teaspoon of walnut filling (or one of the alternative fillings) in the middle. Fold the disc in half, and seal it by first pressing along the edge, and then pinching and twisting the sealed edge inwards with the tips of your thumb and index finger. This will give the cookie its characteristic look.
