With all the jams cooked in the region, there was a time when the only imported variety was an Australian jam made from watermelon rind. It was good but it lacked the enticing aromas of cardamom, rose water, and many other spices of the home-made jams. Here is how you can make it at home.

  • 1 lb (450 g) watermelon rind (measured after removing the green outer skin and all traces of pink)

  • Cut rind into ⅓ in/8mm strips. Cover in cold water and bring to a quick boil. Reduce heat, and simmer slowly until translucent, about 30 minutes. Drain, and reserve 1½ cups (375 ml) of liquid.
