Method

  • In a medium-sized heavy saucepan, heat the syrup and the coffee beans.
  • Bring to the boil, reduce to a simmer and cook for 5 minutes.
  • Remove from the heat, cover the saucepan, and allow the liquid to infuse for approximately 15 minutes.
  • Pass through a fine sieve, lined with a double layer of cheesecloth that has first been moistened with water
