Method

  • In a small heavy saucepan, heat the cream with the ground coffee and the cinnamon stick.
  • Bring to the boil and simmer for 5 minutes.
  • Remove from the heat, cover the saucepan, and allow the mixture to infuse for approximately 15 minutes. The coffee and cinnamon flavors should come through clearly. If not, infuse for a few more minutes.
