Method

  • Holding the fruit upright, stem side up, slice the pears thinly on a mandoline. (Note that the slices closer to the core yield better-shaped chips.)
  • Soak the slices in the simple syrup for approximately 15 minutes.
  • Remove from the syrup and place on a Silpat-lined baking sheet. Bake in a preheated
