Method

  • Puree the grapes in a food processor and then pass through a fine sieve, pressing hard on the solids and discarding them, reserving the liquid.
  • Bring the resulting grape puree and simple syrup to a boil. Remove from the heat, transfer to a bowl set over an ice water bath and cool, stirring occasionally.
  • Once cool, transfer the mixture to the refrigerato
