Method

  • In a medium-sized heavy saucepan, bring the milk and vanilla beans to a simmer. Remove from the heat, cover the pan and allow to infuse for 30 minutes.
  • Remove vanilla beans, rinse, and dry, and reserve for another use. In the bowl of an electric mixer outfitted with the whisk attachment, beat egg yolks and sugar to thick ribbon stage.
  • The mixture should
