Method

  • Place the chocolate in a heat-proof bowl.
  • Place tea leaves and heavy cream into a small heavy saucepan.
  • Bring the mixture to a boil, then reduce to a simmer and simmer for 5 minutes.
  • Remove from heat, cover the saucepan, and allow the mixture to infuse for approximately 15 minutes.
  • Then pass the liquid through a fine sieve, pressing
