Method

  • In a small bowl, dissolve the cornstarch in the first quantity of water and set aside.
  • Place the carrot juice and granulated sugar into a medium-sized heavy saucepan. Bring to the boil to dissolve the sugar and then reduce the heat to a simmer.
  • Add the cornstarch mixture and cook, stirring, until the liquid thickens slightly and loses the raw taste of c
