Method

  • Bring a medium saucepan of water to the boil.
  • Add the basil leaves and as they are wilted, immediately remove them to a bowl of ice water to set the color.
  • Remove the leaves from the ice water and squeeze out excess liquid.
  • Place on a double layer of absorbent paper and dry thoroughly.
  • In a food processor, puree the leaves with the s
