Crème brûlée

The literal translation of this rich dessert is ‘burnt cream’. Just before serving, chilled custard is sprinkled with sugar, which is quickly caramelised under a grill to form a brittle topping, creating a delicious contrast in flavour and texture to the smooth, creamy custard beneath.
