No commercial ice cream can ever compare with the creamy, decadent richness of the home-made variety. This classic favourite is peppered with fine black specks: the tiny seeds of the vanilla pod, which release a fabulous flavour. For a light, smooth result every time, with minimal fuss, an ice-cream churn is highly recommended.

  • 5 egg yolks
  • 100 g ( oz) caster sugar

Method

  1. Whisk the egg yolks and sugar in a heatproof bowl until thick and creamy and almost white. Bring the milk and vanilla pod slowly to the boil in a heavy-based pan. Gradually whisk the boiling milk into the eggs and sugar, then transfer the mixture to a clean pan.
