Sticky Date Pudding

For this recipe, you need one of the essential ingredients of British cuisine: bicarbonate of soda!

Ingredients

For the pudding:

  • 175 g (6 oz) soft fresh dates (Medjool if possible)
  • 1 heaped teaspoon bicarbonate of soda (baking soda)
  • 75 g ( oz) lightly salted butter
  • 80 g ( oz) demerara sugar
  • 80 g ( oz) dark soft brown sugar (dark vergeoise if possible)
  • 175 g (6 oz) self-raising flour
  • 1 teaspoon natural vanilla extract

For the sauce:

  • 500 ml (17 fl oz/2 cups) thin (pouring/whipping) cream
  • 150 g ( oz) unsalted butter
  • 150 g ( oz) dark brown sugar

Method

PREHEAT THE OVEN TO 180°C (350°F/GAS 4). Bring 275 ml ( fl oz) of water to the boil, then pour it into a mixing bowl. Chop the dates, then soak them in the hot water. Let them cool before adding the rest of the pudding ingredients and beating them well with an electric beater to break the dates into tiny pieces.

BUTTER A BAKING TIN OR DISH AND POUR IN THE BATTER. Bake the pudding for 40 minutes, then take the dish out of the oven and preheat the oven grill.

BRING THE SAUCE INGREDIENTS TO THE BOIL IN A SAUCEPAN. Pour half over the pudding and place it under the oven grill, until bubbles form on top.

SERVE THE PUDDING WITH THE REST OF THE SAUCE AND, IF YOU LIKE, SOME CRÈME FRAÎCHE OR CLOTTED CREAM IF YOU HAVE IT ON HAND.
