Method

  1. Place the raspberries, sugar syrup and lemon juice in a blender, then blitz until a puree forms. Pass the sauce through a fine-mesh sieve into a bowl to remove the seeds. Cover the sauce with plastic film and refrigerate until required. (Store leftovers in an airtight container in the refrigerator for up to 3 days.)
