Method

  1. Heat the sugar syrup in a heavy-based saucepan over medium heat to simmering point, then add the star anise, vanilla bean, rum and brown sugar and whisk to combine. Simmer over low heat for 3 minutes. Add the softened gelatine and stir until dissolved. Remove from the heat and strain through a fine-mesh sieve into a heatproof bowl. Leave until completely cool but not set.</
