  • 130 g caster sugar
  • 500 g strawberry puree (i use ponthier)

Method

  1. Stir the caster sugar into the strawberry puree until the sugar has dissolved. Mix the powdered glucose with the water and stir until dissolved, then stir into the strawberry puree. Churn the straw-berry mixture in an ice-cream machine following the manufacturer’s instructions until firm. Transfer to an airtight container and freeze for at least 2 hours or until frozen. (So
