A posset is an old English classic where the acidity of the sharp citrus juice sets the cream. Lemon or passionfruit juice can also be used. Serve the posset simply with fresh red berries or a citrus salad.
Heat the cream, caster sugar and grapefruit zest in a small heavy-based saucepan over medium heat to simmering point. Immediately remove from the heat and leave to stand for exactly 2 minutes, then slowly stir in the grapefruit juice – you will feel the cream start to thicken naturally as the juice is added. Strain through a fine-mesh sieve into a heatproof bowl and leave a
