Let’s talk about the shallot. It’s part of the allium family, so it’s in the same family as leeks, garlic, and other onions. Shallots are typically sweeter and more subtly flavored than other onions. Shallots are my favorite onions, and this is my favorite thing to make with them.

  • ½ cup (80 g) diced shallot

  1. Heat a medium-size skillet over medium-high heat, then spray the skillet with a light coating of avocado oil. Reduce the heat to medium-low and add the shallots to the skillet.
