Dino Ribs

Okay, so a hill I’m willing to die on is that beef ribs are the best bite in barbecue. Yes, better than brisket. However, my favorite beef rib, the plate rib (a.k.a. the dino rib), is expensive and can be hard to find. However, its little brother, the beef rib, is easy to find—and it’s not sought after, so you may even find it on sale. Just don’t spread the word. If you do things right, you can get a similar bite to a plate rib out of this humbler cut. So, by all means, go for the dino rib
