Beef back ribs are generally leaner than plate short ribs or chuck short ribs, but with a little bit of TLC they can be juicy and tender.

Method

  1. Start by trimming your meat on a large cutting board. Use a sharp knife to remove any excess or hard fat and silver skin. Place the trimmed ribs on a baking sheet. Sprinkle SPG on both sides of the meat, cover with plastic wrap, then refrigerate for 1 hour.
  2. While the meat rests, make the baste. In a small bowl, stir together the orange juice and vinegar. It sho
