Looking for clean char marks on your meat? Don’t flip it too early. Let it cook a full 6 minutes or so before taking a gentle peek underneath to make sure char marks have formed—then you can flip. Never flip back and forth multiple times as you cook. Not only does this ruin the potential of clean char marks, but it also makes it harder to gauge when the chicken is done since both sides will appear cooked before the middle of the breast is done cooking.
