Jerk-Style Smoked Chicken Thighs

I have a good friend who owns a Jamaican seasoning company and tends to send me all sorts of spice mixes. I think it opened my family’s eyes to how delicious jerk chicken can be, and this version is a big flavor recipe thanks to the spices, instead of being too reliant on fat and salt. Still, one thing I always want to do is show respect if I’m not familiar with a culture. Jerk chicken is one of those things I have no business speaking about, and I’ll admit that to anyone.
