Bo Wellington

Beef Wellington is something that never really appealed to me, but that’s only because I am not a fan of mushrooms. I actually have an allergy to them. Since salmon is one of my favorites, when I went to put my own twist on this famous dish, I went ahead and changed the protein as well as the mushrooms. These days, this is one of my favorite dishes to make. The puff pastry gives you a buttery crunch, the creamed spinach is soft richness, and the salmon brings the middle texture. Oh, and fro
