I grew up eating French toast with a classic crust, meaning dipped in a light egg and milk mixture, then seared in a pan. One major component of French toast is butter. It’s what creates that savory crunchy outer. Croissant bread is layered with butter. So, how can we maximize butter flavor? Swap croissant bread for regular bread. Now, croissant bread is airier, which is why I add the cornstarch. It helps get a more consistent crunch, like the French toast you know and love.
