Pain perdu is the original name for French toast. Before refrigeration was invented, when bakers had bread left over from the previous day, they would rehydrate it in milk. Now, with modern French toast, you customarily dip it in liquid. If the French toast flops in the middle, it’s too soaked. So, how do you avoid that? Well, if you start out with stale bread, the liquid rehydrates it instead of making it soggy. So, this keeps in tradition with the spirit of pain perdu. Why muffins?
