Cod Sando

This is straight up inspired by a steak katsu sandwich. But cod, by nature, is a bit bland to me. Turn that downside into a benefit: It is a fish you can load up with flavor. Don’t be afraid to heavily season cod. In fact, I use cod when I’m testing out new spices and seasonings because the flavor is so one-dimensional you can identify what the spices bring much more easily. The seasoning mix you’ll find here is one of my favorites. Lemon pepper along with rosemary gives you a complex base.
