Although cheong and oleo saccharum are very similar, there is one material difference between the two. The Latin translation of oleo saccharum is “oily sugar,” so we’re specifically talking about one thing. Traditional cheong actually covers myriad different things—syrups, marmalades, jams, etc. On one hand (the oily sugar hand), we’re using the skin, and on the other hand (the cheong hand), we’re using the entire piece of fruit.
